Description
In Hong Kong, flavour is never born from a single source. It emerges from the land itself: its climate, soil, and cultural heritage, and from the quiet dedication of growers and food artisans who translate the city’s landscape onto the plate. Through their craft, the character of Hong Kong is preserved in taste.
This autumn, PMQ Taste Library and Katie Chick, head of LoCoFARMS, present Taste of Terroir, on view from 18 September to 8 November 2026. As guest curator, Katie draws from her extensive work in eco-cultural conservation and agricultural revival to guide visitors across Hong Kong’s diverse terrains—wetlands, oceans, woodlands, and farmlands, and uncover the rich, native flavours rooted in each landscape.
Through curated books, terroir ingredients, field recordings, photography, and a series of immersive programmes, the exhibition reveals the intricate relationships between ecology, agriculture, and food production. Visitors will encounter the breadth of Hong Kong’s homegrown ingredients: pond-raised fish, local rice, pearl oysters, native forest plants, and farm produce such as
local eggs, cured pork sausages, and fermented vegetables. Together, these stories highlight how today’s food artisans blend tradition with innovation to imagine new futures for local ingredients.

Hong Kong Spirits: Conversation & Tasting Experience
True local spirits encapsulate a region’s soil, climate, and culture in every drop." Join usfor an exclusive tasting experience celebrating home-grown Hong Kong spirits!
We kick off with an insightful conversation led by eco-cultural host Katie Chick, featuring Lillian Li (Season Food), Miffy Ng (Good Old Soil) and Dennis Mak (Magnolia Lab) as they share the art, passion, and journey behind local craft distilling. Next, dive into a curated tasting session sampling four handpicked local creations infused with perilla, wampee, citronginger, and traditional Hakka yellowricewine for an authentic taste of Hong Kong. To complete the experience, enjoy an exclusive food-pairing menu crafted by sommelier Steven Lam, designed to highlight the rich diversity of local ingredients.

A Wander In The Forest: Local Forest Flavour Cocktail Experience
Tucked just beyond the city line lies Hong Kong’s back garden—a vibrant mountain
landscape far richer than most imagine. Join Katie alongside local mixologists Jeff Kan and Siuming as they reveal the art of foraging and preparing native botanical ingredients for the table. To top off the session, both mixologists will craft two distinct cocktails using the exact same ingredient, letting you taste the wild, fresh essence of Hong Kong's hillsides firsthand.

Discovering Wetland Flavors — A Taste of the Northern Metropolis
As the Northern Metropolis develops, the fishponds and farmland of the New Territories are undergoing a once-in-a-century transformation. Katie invites veteran local fish farmer and instructor Calvin Yu to share the rich history and evolving future of Hong Kong’s wetland aquaculture. To bring these stories to life, Le Cordon Bleu chef Albert Leung will prepare three authentic local wetland delicacies live—ranging from succulent pond fish and sweet Gei Wai shrimp to rich, savory dried oysters. Come explore the endless culinary possibilities of our local ecosystem with your palate!
